Near the city of Chiavenna (SO) there are many crotti, natural caves inside which a particular current of air, called "sorèl", passes through, keeping their temperature constant, around 8 degrees, and thus allowing these recesses to be used as cellars to store wines, cured meats, and cheeses.
Many of these crotti have been transformed into trattorias where you can taste typical local dishes, while others have become real restaurants offering a menu based on zero-kilometer products, cooked according to tradition and accompanied by the best wines of Valtellina.
In the first two weeks of September, you can attend the "sagra dei crotti", a tradition that began around the middle of the last century, on which occasion many private crotti are also opened and can be visited, tasting locally produced cured meats and cheeses as well as wines produced in the surrounding areas.
